  • Breakfast Fare

    Breakfast is the most important meal of the day, so they say.  But it is also the most difficult to get my boys to eat.  Today, I made something that was a huge hit, so I am sharing the idea here for other moms with similar breakfast challenges.

    Mommy’s Gingerbread

    1/4 c butter
    1 c sugar (I use 2/3c or less)
    1 egg
    1 1/2 c flour
    1/4 t baking soda
    1/2 t cream of tartar
    1/4 t cinnamon
    1/4 t ginger
    1/8 t nutmeg
    1/2 c milk

    Preheat oven to 350.  Cream butter and sugar.  Add egg.  Add dry ingredients and mix well.  Stir in milk.  Bake in greased and floured 13×9 pan for 18-20 minutes.  Sprinkle with powdered sugar.  Cut into cookie cutter shapes (I did stars and gingerbread men) and decorate with raisins.  Serve with a side of homemade applesauce. Voila! A breakfast hit :)
